Quick Broccoli Slaw Lunch Idea

    2 packages of broccoli slaw (12 ounces each, usually)
    1 can of chickpeas, drained
    1 cup of celery 
      1 cup sunflower seeds  
    1 cup toasted slivered almonds (I've used walnuts on occasion as a substitute)
     1 bunch scallions, chopped 
    1 cup cranraisins  
    1 large red pepper, chopped  
    1/4 cup of canola oil  
    3 Tbsp sugar 1/3 cup cider vinegar
Prepare the dressing first to allow sugar to dissolve while assembling the rest of the ingredients. Add the dressing and toss thoroughly.

Serves 25 as a side dish. You can also cut the recipe in half. This makes a great lunch idea or a great potluck salad!
